Whether you’re making this beef and noodles recipe with raw beef or with leftover roast beef (our preferred method!), it’s soooo delicious and cozy for those winter months. Here is our Homemade Egg Noodles Recipe, but if you prefer to buy them at the store, don’t fret…we won’t judge you! We were buying them up until recently when we figured out how easy it was to make. Check out the link for directions! I digress…back the the beef and noodles recipe!
This beef came from a cow we raised on our farm. It’s grass fed and delicious. I get asked how we could butcher an animal we’ve raised. It’s hard, but it’s a conscious choice to know where your food came from and how it was raised. They had a wonderful life on our farm and I am grateful for them.

Ingredients
2 tablespoons avocado oil
2-3 carrots, diced
2 ribs celery, diced
1 small onion, diced (red or yellow works here, cooks choice!)
5 cloves garlic, minced (add more to taste if you prefer)
3 cups leftover roast beef
3 quarts *beef bone broth or regular beef broth
1 batch of our *Homemade Egg Noodles Recipe
2-3 sprigs dried thyme (optional)
salt & pepper to taste
1 bunch fresh parsley, chopped
*Egg Noodles: If you’d prefer to buy store bought, I would highly suggest getting your egg noodles in the freezer section if your grocery has it. It’s 2nd best to homemade..I promise you!
*Beef Bone Broth is incredibly nutritious for you. It has collagen, supports joint health, great for digestion and gut health, supports your immune system.

Directions

1. In a dutch oven, add your oil over medium heat. Add the carrots, celery and onion and sauté until they are softened and slightly brown. Add the garlic and cook 1-2 more minutes.

2. Pour in the beef bone broth and bring to a boil until the vegetables are nearly done.

3. Next, drop in your Homemade Egg Noodles (or store bought). The homemade egg noodle will only take 8-10 minutes to cook. For store bought, follow *package instructions.
*Most package instructions call for boiling in water and then adding, but it is our preference in this home to ALWAYS boil it in the broth if you’re making a soup. It will boost the flavor of your noodles substantially.

4. Once noodles are complete, turn off the heat. Serve up immediately in your favorite bowl topped with thyme and fresh parsley. At this point you can get as creative as you like with crushed red and parmesan, if you should choose! Enjoy my friends!!
